Farro Salad with Green Olives, Hazelnuts and Raisins

Servings 6 people
Ingredients
1 1/4 cups whole farro
3 cups water
large pinch fine-grain sea salt
juice of 1/2 a Meyer Lemon
1 tablespoon honey
1/4 cup extra-virgin olive oil
1 cup Castelvetrano or other buttery green olive coarsely chopped
1 cup toasted hazelnuts coarsely chopped
3 green onions roughly chopped
1/3 cup golden raisins
large pinch crushed red pepper flakes
1 ounce shaved pecorino plus more for serving
1/4 cup chopped fresh Italian parsely
Instructions
Combine farro, water, and salt in a saucepan over medium-high heat. Cover, bring to a boil, then reduce heat to a simmer. Gently simmer 30 minutes, until farro is tender but not mushy. Drain excess water. Set aside to cool.
In a large serving bowl, whisk together lemon juice, honey and olive oil. Stir in olives, hazelnuts, green onions, raisins, crushed red pepper and 1 ounce of pecorino. Add farro and toss to thoroughly combine.
Top with parsley and several pecorino shavings; serve.

The Mogollon Rim is a topographical and geological feature cutting across the U.S. state of Arizona. It extends approximately 200 miles, starting in northern Yavapai County and running eastward, ending near the border with New Mexico.It forms the southern edge of the Colorado Plateau in Arizona.
The Rim is an escarpment defining the southwestern edge of the Colorado Plateau. Its central and most spectacular portions are characterized by high cliffs of limestone and sandstone, namely the Kaibab Limestone and Coconino Sandstone cliffs. The escarpment was created by erosion and faulting, cutting dramatic canyons into it, including Fossil Creek Canyon and Pine Canyon. The name Mogollon comes from Don Juan Ignacio Flores Mogollón, the Spanish Governor of New Mexico from 1712 to 1715.
Much of the land south of the Mogollon Rim lies 4,000 to 5,000 feet above sea level, with the escarpment rising to about 8,000 ft. Ponderosa pine forests are found both on the slopes of the Rim and on the plateau north of it. The Mogollon Rim is a major floristic and faunal boundary, with species characteristic of the Rocky Mountains living on the top of the plateau, and species native to the Mexican Sierra Madre Occidental on the slopes below and in the Madrean sky islands (high, isolated mountain ranges) further south.

The third concert in the Tonto Community Concert’s 2018-2019 Season. Canadian twin sisters Carli (on guitar) and Julie Kennedy (on fiddle) have been making music together since they could talk. Twin Kennedy is known for their sibling harmonies, high energy show and heartfelt songwriting. They blend their classical training with their Country roots to create a program enjoyed by all ages.
