Payson is Shining in 2021
It’s been a very unfortunate 12 months, in many ways. Our community’s strength has been tested through a pandemic, politics (locally and nationally), and the usual struggles that sometimes come with managing life in a rural community. I am proud to say that I am so thankful for our little community’s resolve and the new things that are blooming all around us! Have you noticed that most of our businesses have survived, and new businesses are popping up left and right? There seems to be an attitude of positivity and pride in the air, and I love it!
We have a handful of new Town staff members that are excited to move things forward, as well as a new hospital CEO that is passionate about bringing the best healthcare possible to us. People are volunteering their time, with a smile on their faces, to help with testing and vaccinations for those that can get them at this time. Collaborations of organizations all over the Rim Country are sprouting up, and people are working together to accomplish some very beneficial plans for the people of Payson! I am so thankful to see this forward-thinking attitude and want to encourage everyone, as always, to shop locally and support each other as we continue on this journey together in 2021!
Special Days In May
2 May- World Tuna Day
It is observed on 2 May and is established by the United Nations to raise awareness about the importance of tuna fish.
4 May – International Firefighter’s Day
International Firefighter’s Day is observed every year on 4 May. It was instituted on 4 January, 1999 after a proposal via emailed out across the world due to the deaths of five firefighter’s in a bushfire in Australia. Therefore, this day is observed to recognise and honour the sacrifices that firefighter’s make to ensure that their communities and environment are as safe as possible.
10 May – Mother’s Day (Second Sunday of May)
Mother’s Day is celebrated every year on the second Sunday of May to honour motherhood and is observed in different forms throughout the world. Mother’s Day was founded by the Anna Jarvis who had given the idea of celebrating Mother’s Day in honour of mothers and motherhood in 1907. Nationally this day was recognised in 1914.
25 May – National Memorial Day (last Monday of May)
National Memorial Day is observed on last Monday of May. This year it will be observed on 25 May, 2020,

Spicy Tuna Wraps
Spicy Tuna Wraps
with Homemade Chipotle Greek Yogurt Ranch
Ingredients
- 2 (10 inch) whole wheat tortillas
- ½ cup chopped romaine hearts
- 1 roma tomato, sliced
- 1/4 cup roasted fresh corn (or can used canned)
- ½ avocado, sliced
- 2 tablespoons chopped green onions
- 1 can Albacore Tuna, drained
For the chipotle ranch dressing:
- ¼ cup nonfat plain greek yogurt
- ½ teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/2 teaspoon fresh lemon juice
- 1/4 teaspoon dried dill
- ¼ teaspoon salt
- ¼-½ teaspoon chipotle chili powder taste
- 1 tablespoon water to thin dressing

Lay out two tortillas on a large cutting board. Divide the lettuce, tomato, corn, avocado slices, green onion and tuna between each tortilla.

Drizzle each wrap with 1 tablespoon of the dressing, reserving the rest for dipping.

Roll up each tortilla, tucking in the ends as you go.

Enjoy immediately with the extra chipotle ranch.
